I met Melissa, the founder & owner of Backpacker’s Bistro at PCT Days in 2017, where she was offering up samples of several of her gourmet meals. A long-distance hiker herself, she recognized a need for tasty, healthy, and nutritious backpacking food and put her culinary skills to use to fill that niche. I tried everything she had, and I can report that I would actually consider carrying a stove just to eat these meals – they are delicious!
